Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef with garlic over medium heat until browned.
Drain excess fat, then stir in the cheddar and Parmesan cheeses, Italian seasoning, salt, and pepper.
Remove the skillet from heat and let the mixture cool slightly.
Open the can of biscuit dough and separate it into individual biscuits.
Flatten each biscuit into a circle and place a spoonful of the filling in the center.
Fold the edges of the biscuit up to enclose the filling and pinch to seal.
Brush the tops with melted butter and sprinkle additional Parmesan on top.
Place the bombs on a baking sheet lined with parchment paper and bake for 15-18 minutes.
Remove from the oven and let cool slightly before serving.
