Ingredients
  

  • 6 dried red chilies like guajillo and ancho
  • 2 cups beef stock or vegetable stock
  • 2 tablespoons vegetable oil
  • 1 pound beef chuck cut into cubes
  • 1 medium onion finely chopped
  • 4 garlic cloves minced
  • 1 teaspoon cumin
  • Salt to taste

Method
 

  1. Deactivate the chilies by soaking them in hot water.
  2. In a blender, combine the soaked chilies with beef stock and blend until smooth.
  3. Heat vegetable oil in a large pot over medium heat.
  4. Sauté the chopped onions until translucent.
  5. Add minced garlic and sauté until fragrant.
  6. Incorporate the beef chuck, browning on all sides.
  7. Pour in the blended chili sauce and bring to a simmer.
  8. Reduce heat and cover, cooking until the beef is tender, about 1.5 to 2 hours.
  9. Adjust seasoning with salt and serve hot.
