This Louisiana Chicken Pasta combines tender chicken with a creamy, spicy sauce and perfectly cooked pasta, making it a vibrant centerpiece for gatherings or a cozy weeknight dinner that delights the palate with every flavorful bite.

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 8 oz linguine or fettuccine
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup diced tomatoes drained
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt, pepper, and Cajun seasoning, then add them to the skillet.
  4. Cook the chicken for about 6-7 minutes on each side until fully cooked, then remove and set aside.
  5. In the same skillet, add onion and bell pepper, sautéing for 5-6 minutes until softened.
  6. Add the garlic, smoked paprika, and additional Cajun seasoning, stirring for another minute until fragrant.
  7. Pour in the heavy cream and add the diced tomatoes, stirring to combine.
  8. Return the cooked chicken to the skillet and let it simmer in the sauce for an additional 5 minutes.
  9. Toss in the cooked pasta and chopped parsley, mixing gently to coat evenly.
  10. Taste and adjust seasoning with more salt, pepper, or Cajun seasoning as desired, then serve hot.
