Ingredients
  

  • 2 pounds of potatoes
  • 1/2 cup of red onion diced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Prepare the potatoes
  2. Cook the potatoes
  3. Drain and cool the potatoes
  4. Combine vegetables and olives
  5. Add feta and herbs
  6. Dress the salad
  7. Season to taste
