Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 2 pints vanilla ice cream softened

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
  6. Using a cookie scoop or tablespoon, drop mounds of dough onto a lined baking sheet, spacing them 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers look soft.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, take a scoop of softened vanilla ice cream and sandwich it between two cookies.
  10. Serve immediately, or wrap individually and freeze for a firmer ice cream sandwich.
