Preheat your oven to 350°F (175°C).
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
Using a cookie scoop or tablespoon, drop mounds of dough onto a lined baking sheet, spacing them 2 inches apart.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers look soft.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, take a scoop of softened vanilla ice cream and sandwich it between two cookies.
Serve immediately, or wrap individually and freeze for a firmer ice cream sandwich.
